We are proud to introduce the fourth instalment in the
Brix Select Cask Series, #004 Ginger Beer Finish.
This release was born from a happy accident. Back in 2022, we received a low carbonated batch of our Spiced Ginger Beer + Native Finger Lime ready to drink cans. Steadfast on not wasting this gloriously tasting, although less than bubbly batch, our Head Distiller, Shane Casey, was determined to turn this mishap into an opportunity to create something extraordinary.

Our team of distillers set out on a mission, cracking hundreds of Spiced Ginger Beer cans by hand and filling a selection of high quality American & French Oak barrels tucked away in our barrelhouse. After one year of resting, the pronounced notes from our Ginger Beer had seeped into the oak staves of the barrels. Finally, it was time for the team to get to work emptying the barrels and refilling them with our aged Australian Rum.

After finishing in these casks for 1 month, the bold Spiced Ginger Beer flavours infused with our signature Brix Australian Rum. The result?
Brix Select Cask Series, Ginger Beer Finish,
a tantalising blend of rich Rum intertwined with the vibrant flavours of spiced ginger, lime, vanilla, cinnamon, honey, stone fruit and Anzac biscuits.

This release represents a true testament to our team's dedication to innovation and a reminder to embrace the age-old adage: when life gives you lemons, (or Spiced Ginger Beer), make Rum!

INGREDIENTS
60ML BRIX SELECT CASK #004
GINGER BEER FINISH
30ML LEMON JUICE
20ML SUGAR SYRUP
15ML EGG WHITE​
MARASCHINO CHERRY TO GARNISH

METHOD
1) Add all ingredients to a cocktail shaker & dry-shake for 30 seconds without ice
​
2) Add ice and shake again until the shaker becomes ice cold
​
3) Strain into a Rocks glass over a large block of ice
​
4) Garnish with a maraschino cherry

FRENCH OLD FASHIONED
INGREDIENTS
60ML BRIX SELECT CASK #004 GINGER BEER FINISH
15ML SWEET VERMOUTH
SPOONFUL OF BENEDICTINE
4 DASHES ANGOSTURA BITTERS
ORANGE TWIST

METHOD
1) Add all ingredients to a mixing glass & add ice
​
2) Stir for 30 seconds to desired dilution, tasting as you go
3) Strain into a rocks glass over a large block of ice
4) Twist lime peel over the drink & use peel as garnish
